Red Cabbage and Feta Salad Recipe

The sharp taste and crunchy texture of red cabbage go beautifully with a rich feta cheese, providing satisfaction to a stressed mind and body on both counts. The red cabbage provides bulk to satisfy the appetite and sulphur compounds that aid detoxification – cleansing processes that need to work harder in the face of stress. You can also add a diced apple to this dish, which will provide another texture, and the sweetness of the apple blends well with the other flavours while also sating any sweet craving the brain might be seeking because of long-term stress.

Serves 2
½ large red cabbage, finely shredded
150 g (5 oz.) feta cheese, crumbled
1 apple, diced (optional)
2 tablespoons sunflower seeds
4 tablespoons tangy vinaigrette

Instructions

1) Mix the shredded cabbage with the crumbled cheese, chopped apple (if you’re using it) and sunflower seeds. Toss well in the vinaigrette just before serving.
